• Preparation time: less than 30 mins. Cooking time 1 - 2 hours.  Serves 6.


    For the stuffing

  • Prep. time: 30 mins; Cooking time: 20 mins.  Serves: 6 - 8.


    1 Large parsnip

    85 gms unsalted butter

    110 gms chopped onions

    1 Clove garlic, crushed

    1 tbsp flour

    1 tsp cumin seeds

    1 tsp coriander seeds

    1 tsp garam masala

    pinch cayenne pepper

    1.2 litres chicken or beef stock

    150 mls cream

    1 tbsp chopped chives to serve


    1.  Peel the parsnip.

    200 gms chicken breast

    200 gms low fat cottage cheese

    100 gms mushrooms

    4 cloves garlic


    Slice mushrooms thinly and toss them into a frying pan with two crushed cloves of garlic.  Stir gently and let them sweat.

    Slice chicken into strips or chunks, according to preference.

    When the mushrooms are cooked, take them out of the pan and put them onto a warm plate.

  • Serves 4. Preparation time: 15 mins. Cooking time 1 hr 10 mins.


    2 tsp groundnut oil

    1 small red onion, chopped

    3 garlic cloves, peeled and crushed

    350 gms lean beef mince

    Small handful of fresh thyme leaves

    3 carrots, diced

    3 parsnips, diced

    1 tbsp Worcestershire sauce

    1 tbsp tomato puree

    600 mls beef stock (make this a thick consistency)

    400 gms new potatoes

    100 gms soft goat's cheese, roughly broken up

    Pinch of grated nutmeg

    1 tbsp snipped fresh chives


    1 kg Roasting Potatoes such as Desiree

    1 Red onion, peeled and cut into wedges

    75 gms Green Olives

    1 Lemon, sliced

    50 gms Pancetta cut into strips, or use the diced variety on offer

    2 Bay Leaves

    1 Tbsp Tomato Puree

    1 Tbsp Balsamic Vinegar

    120 ml Chicken Stock

    1.7 kg Chicken, jointed

    1 Tbsp Extra Virgin Olive Oil

    Freshly Ground Black Pepper

    Chopped Flat Leaf Parsley (Optional)


    1. Preheat the oven to 180C/Gas 4

    Preparation Time 10 minutes. Cooking Time 40 minutes.

    Freezes well.
